Ingredients
  • 1/2 cup butter
  • 1 cup crushed chocolate wafer cookies
  • 12 ounce semisweet chocolate chips
  • 1 cup slivered almonds
  • 7 ounce shredded coconut
  • 7 ounce sweetened condensed milk
Instructions
  1. In ovenproof 8″x12″ glass baking dish, melt butter in preheated 350° f oven without browning.
  2. Remove from oven and sprinkle cookie crumbs in an even layer over butter.
  3. In even layers, sprinkle chocolate chips, then almonds, then coconut.
  4. Finally pour sweetened condensed milk in a smooth layer over the top.
  5. Bake in 350° f oven for 45 min. or until top is golden brown.
  6. Allow to cool thoroughly before cutting. Makes 24 bars

Ingredients
  • 3/4 cup packed dark brown sugar
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon fine salt
  • 6 ounces semisweet chocolate chips or chunks
  • 4 ounces dried cranberries or dried cherries
Instructions
  1. Evenly position 2 racks in middle of oven and preheat to 375°F.
  2. Line 2 baking sheets with parchment paper or silicon sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
  3. Whisk sugars, eggs, oil and vanilla in large bowl until smooth.
  4. Whisk flour, baking soda, and salt in another bowl. Stir dry ingredients into wet ingredients with a wooden spoon; take care not to over mix.
  5. Stir in chocolate and dried fruit.
  6. Scoop heaping tablespoons of dough onto prepared pans.
  7. Wet hands slightly and roll dough into balls.
  8. Space cookies about 2 inches apart on pans.
  9. Bake about 12 to 15 minutes, until golden but still soft in the center.
  10. Transfer hot cookies to cooling rack.
  11. Serve.

Store cookies in a tightly sealed container up to 3 days
