Ingredients
  • 1/2 cup butter
  • 1 cup chopped pecans
  • 1 small sweet potato baked and peeled
  • 1 cup sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla
  • 1 cup light corn syrup
  • 3 large eggs- beaten
  • dash of salt
  • 1 pie shell
Instructions
  1. Brown butter and pecans in sauce pan- Until butter is golden brown not burned,
  2. Add mashed cooked sweet potato.
  3. In separate bowl, add sugar, lemon juice, vanilla, corn syrup,eggs, and salt and stir.
  4. Combine with browned mixture and pour into an unbaked pie shell.
  5. Bake at 425 for 10 minutes.
  6. Lower heat to 325 for 40 to 60 minutes.
Notes

I always double this recipe and make two pies at once. It’s a great holiday pie.

 

Chocolate Bread Pudding

Ingredients
  • 1 tablespoon butter, plus more for baking dish
  • 8 slices (8 ounces) cinnamon-raisin bread
  • 2 cups milk
  • 3 ounces semisweet chocolate
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon confectioners’ sugar
Instructions
  1. Preheat oven to 350°.
  2. Lightly butter an 11-by-7-inch (or 9-inch square) baking dish; set aside.
  3. Toast bread (in the oven or toaster) until lightly crisped.
  4. In a medium saucepan, combine milk, chocolate, and butter; place over medium-low heat, stirring occasionally, until chocolate has melted, about 5 minutes.
  5. Tear bread into large pieces (about 4 or 5 per slice); scatter evenly in prepared baking dish.
  6. In a medium bowl, whisk together eggs, granulated sugar, and vanilla.
  7. Whisk in warm milk mixture until combined.
  8. Pour over bread.
  9. Bake until pudding has puffed and is firm, about 25 minutes.
  10. Cool at least 10 minutes, and dust with confectioners’ sugar just before serving.
Notes

Using a cinnamon-raisin bread adds even more flavor to this chocolatey pudding.
This pudding can be served warm, room temperature, or cold. To chill, let cool completely, then cover with plastic wrap, and refrigerate at least one hour or overnight.

 

Raisin Pie

Ingredients
  • 1 box raisins (12 ounces) – cook and drain to plump.
  • 1 cup sugar
  • 2 tablespoon flour
  • 1 teaspoon vanilla
  • 1 small container sour cream
  • 1/2 stick of butter
Instructions
  1. Combine all ingredients.
  2. Pour into unbaked pie shell.
  3. Cover with another pie crust.
  4. Sprinkle sugar on top crust.
  5. Bake until brown in 300 degree oven.
