Peanut Butter Cookies with Chocolate Chunks

Ingredients
  • 1 1/2 cups unbleached all-purpose flour
  • 1/3 cup rolled oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup crunchy peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup honey
  • 1 egg 1 teaspoon vanilla extract
  • 5 (1 ounce) squares semisweet chocolate
Instructions
  1. Mix flour, oats, baking soda, and salt in medium bowl.
  2. Chop the chocolate into chunks.
  3. In another bow and using an electric mixer, beat peanut butter, brown sugar, butter, honey, egg, and vanilla in large bowl until well blended.
  4. Stir dry ingredients into the peanut butter mixture in 2 additions.
  5. Stir in chopped chocolate.
  6. Cover and refrigerate until dough is firm and no longer sticky, about 30 minutes.
  7. Preheat oven to 350 degrees .
  8. Butter 2 heavy large baking sheets.
  9. With hands, roll 1 heaping tablespoonful of dough for each cookie into 1 3/4 inch diameter ball.
  10. Arrange cookies on prepared baking sheets, spacing 2 1/2 inches apart.
  11. Bake cookies until puffed, beginning to brown on top and still very soft to touch, about 12 minutes.
  12. Cool cookies on baking sheets for 5 minutes.
  13. Using metal spatula, transfer cookies to rack and cool completely.

Microwave Peanut Brittle

Ingredients
  • 1 cup raw peanuts
  • 1 cup sugar
  • 1/2 cup white corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon butter
  • 1 tablespoon vanilla
  • 1 tablespoon baking soda
Instructions
  1. Stir together the peanuts, sugar, syrup and salt in a 1 1/2 quart microwavable safe casserole pan.
  2. Microwave on High for 7 to 8 minutes, stirring after 4 minutes.
  3. Add butter and vanilla, blend well and microwave 1 to 2 minutes longer, watching carefully to make sure mixture does not burn. The peanuts will be slightly browned and the syrup extremely hot.
  4. Add baking soda, stir gently until mixture is light and foamy.
  5. Quickly pour mixture onto marble slab or lightly greased baking sheet.
  6. Cool for 1/2 hour.
  7. When cooled, break into pieces and store in an airtight container.

Ingredients
  • 3 cups sugar
  • 1 cup oil
  • 3 cups flour
  • 1 cup butter milk
  • dash of salt
  • 1/4 teaspoon baking soda
  • 6 eggs separated
  • 1 teaspoon vanilla
Instructions
  1. Beat egg whites till stiff. Set aside.
  2. Mix sugar , oil, egg yolks, salt and soda.
  3. Alternate flour and butter milk. Let flour be last.
  4. Fold in egg whites last.
  5. Bake in greased tube pan in 350 degree oven. Test in 1 hour. Cake should be springy to touch on top.
