Ingredients
- 2 1/2 cups flour
- 1 3/4 cups sugar
- 1 tablespoon baking soda
- 1 teaspoon salt
- 4 cups Raisin Bran
- 1 cup raisins (optional)
- 3 3/4 to 4 cups buttermilk
- 1/3 cup canola oil
- 2 eggs
Instructions
- Combine flour, sugar, baking soda and salt in a bowl and mix well.
- Stir in the raisin bran and raisins.
- Whisk canola oil, eggs & buttermilk in separate bowl.
- Add flour mixture and stir until just moistened.
- Refrigerate 24 hours.
- Preheat oven to 350.
- Spoon mixture into paper lined muffin cups and bake 20-25 minutes until the muffins test done.
